Description

Air Fryer Cheesy Mashed Potato Balls are a crunchy and delicious way to use up leftover mashed potatoes, combined with cheese and cooked to perfection in an air fryer.


Ingredients

  • 2 cups mashed potatoes (preferably leftover)
  • 1 cup sharp cheddar cheese, shredded
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the cooled mashed potatoes with shredded cheddar cheese until well combined.
  2. Add in the eggs, then stir until cohesive.
  3. Form small balls (about the size of golf balls) and roll each in panko breadcrumbs until fully coated.
  4. Preheat your air fryer to 375°F (190°C). Lightly spray the basket with cooking spray.
  5. Place potato balls in a single layer in the basket and cook for about 10 minutes or until golden brown and crispy, flipping halfway through.
  6. Allow to cool slightly before serving.

Notes

  • Using leftover mashed potatoes is ideal for this recipe.
