Air Fryer Cheesy Mashed Potato Balls are a crunchy and delicious way to use up leftover mashed potatoes, combined with cheese and cooked to perfection in an air fryer.

- 2 cups mashed potatoes (preferably leftover)
- 1 cup sharp cheddar cheese, shredded
- 2 large eggs
- 1 cup panko breadcrumbs
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- In a large bowl, mix the cooled mashed potatoes with shredded cheddar cheese until well combined.
- Add in the eggs, then stir until cohesive.
- Form small balls (about the size of golf balls) and roll each in panko breadcrumbs until fully coated.
- Preheat your air fryer to 375°F (190°C). Lightly spray the basket with cooking spray.
- Place potato balls in a single layer in the basket and cook for about 10 minutes or until golden brown and crispy, flipping halfway through.
- Allow to cool slightly before serving.
Notes
- Using leftover mashed potatoes is ideal for this recipe.
- Feel free to experiment with different types of cheese.
