Crispy and delicious Air Fryer Zucchini Fries that are healthy and easy to make.
Ingredients

- 2 medium zucchini
- 1 cup breadcrumbs (panko or regular)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 large eggs
- 1 tablespoon olive oil
Instructions
- Begin by washing the zucchini and cutting them into fries or sticks, about 1/4 inch thick.
- In a shallow bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
- In another bowl, whisk the eggs and add the olive oil to create a cohesive mixture.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Dunk each zucchini fry first into the egg mixture, allowing any excess to drip off, then coat them in the breadcrumb mixture, pressing gently to adhere.
- Arrange the coated zucchini fries in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer.
- Air fry the zucchini fries for 8-10 minutes, flipping halfway through, until they are golden brown and crispy.
- Remove from the air fryer and serve immediately, optionally garnished with fresh herbs and alongside your favorite dipping sauce.

- For a spicier version, add red pepper flakes to the breadcrumb mixture.
