- 1 large (15-ounce) sweet onion, peeled and ends trimmed off
- 1 tablespoon vegan butter
- 1 tablespoon extra virgin olive oil
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon salt (plus more to taste)
- Optional: 1/4 teaspoon garlic powder
- Optional: 1/4 teaspoon Old Bay seasoning
- Optional garnish: finely diced parsley leaves
Instructions
- Scoop out the top center of the onion, creating a well.
- Place the onion on aluminum foil and fill the well with vegan butter.
- Combine Cajun seasoning with olive oil and drizzle it into the hollowed onion well.
- Generously sprinkle salt and any optional seasonings onto the onion. Wrap it in foil.
- Bake in a preheated oven at 400°F (200°C) for 50-60 minutes, until fork-tender.
- Open the foil, switch to broil, drizzle more melted butter or olive oil on top and broil for 5-10 minutes until golden-brown.
- Peel away the outer layers of the onion and serve with rich juices from the foil.
