- 1 pound breakfast sausage, casings removed
- 1 medium onion, finely chopped
- 1 small red bell pepper, diced
- 3 cups frozen shredded hash browns, thawed
- 2 cups shredded cheddar cheese
- 1 cup shredded Swiss cheese
- 1.5 cups whole milk
- 8 large eggs
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon garlic powder
- 0.25 teaspoon paprika
- 2 tablespoons chopped fresh parsley, optional for garnish
Instructions
- Preheat oven to 350°F. Grease a 9×13-inch baking dish with butter or cooking spray.
- Heat a large skillet over medium heat. Add the breakfast sausage, breaking it apart while cooking until browned throughout, approximately 6-8 minutes. Transfer to paper towels to drain excess fat.
- Return the skillet to medium heat. Add chopped onion and diced red bell pepper. Cook for 3-4 minutes until the vegetables soften. Remove from heat.
- In a large mixing bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and paprika until fully incorporated.
- Add hash browns, cooked sausage mixture, cheddar cheese, and Swiss cheese to the egg mixture. Stir thoroughly until evenly distributed.
- Pour the combined mixture into the prepared baking dish and spread evenly with a spatula.
- Bake for 40-45 minutes until the center is set and the top is golden brown.
- Allow the casserole to rest for 10 minutes. Slice into portions and garnish with fresh parsley if desired.
