Description

Delicious Apple Caramel Empanadas filled with cooked apples and caramel, wrapped in flaky puff pastry.


Ingredients

  • 2 medium apples, preferably tart (such as Granny Smith)
  • 1/4 cup granulated sugar
  • 1 tsp cinnamon (optional)
  • 1 package puff pastry sheets (thawed if frozen)
  • 1 egg (beaten, for egg wash)

Instructions

  1. Peel, core, and dice the apples into small cubes, then place them in a mixing bowl.
  2. Sprinkle granulated sugar and cinnamon over the apples, then toss to coat evenly. Let sit for 5 minutes to soften and release juices.
  3. Heat a skillet over medium heat and add the apples along with their juices. Cook, stirring occasionally, until the apples are tender and slightly caramelized, about 8-10 minutes.
  4. Remove the cooked apples from heat and allow to cool slightly, about 5 minutes.
  5. Roll out the puff pastry sheets on a lightly floured surface to smooth out creases, then cut each sheet into four equal squares.
  6. Place a spoonful of the apple filling in the center of each square, being careful not to overfill.
  7. Fold each square in half over the filling to form a triangle or rectangle, then press and crimp the edges firmly together to seal.
  8. Brush the top of each empanada with the beaten egg to promote a golden, shiny crust.
  9. Arrange the shaped empanadas on a baking sheet lined with parchment paper, leaving space between each.
  10. Bake in a preheated oven at 400°F (200°C) for about 20-25 minutes, or until puffed, golden brown, and crispy around the edges.
  11. Remove from oven and let cool slightly before serving, allowing the filling to set and the crust to crisp further.
