Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Pour 2 cups of apple cider into a saucepan and bring it to a boil over medium heat. Reduce the heat and let it simmer until it reduces to about 1 cup (approximately 15-20 minutes).
  2. In a large bowl, whisk together the dry ingredients: all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the wet ingredients: eggs, applesauce, melted butter, vanilla extract, and the reduced cider.
  4. Gently fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
  5. Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or butter.
  6. Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full using a piping bag for a neat process.
  7. Bake the donuts for 12-15 minutes, or until a toothpick inserted comes out clean, and let them cool in the pan for a few minutes before transferring to a wire rack.
  8. In a small bowl, mix together 1/2 cup granulated sugar and 1 tablespoon cinnamon, and while the donuts are still warm, roll them in the cinnamon sugar mixture.
