- 2 cups apple cider
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda

- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
Instructions
- Pour 2 cups of apple cider into a saucepan and bring it to a boil over medium heat. Reduce the heat and let it simmer until it reduces to about 1 cup (approximately 15-20 minutes).
- In a large bowl, whisk together the dry ingredients: all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine the wet ingredients: eggs, applesauce, melted butter, vanilla extract, and the reduced cider.
- Gently fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
- Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or butter.
- Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full using a piping bag for a neat process.
- Bake the donuts for 12-15 minutes, or until a toothpick inserted comes out clean, and let them cool in the pan for a few minutes before transferring to a wire rack.
- In a small bowl, mix together 1/2 cup granulated sugar and 1 tablespoon cinnamon, and while the donuts are still warm, roll them in the cinnamon sugar mixture.
