Description
A delicious and easy breakfast option that combines the flavors of apples and cinnamon in a quesadilla.
Ingredients
Scale
- 2 large flour tortillas
- 2 medium apples (preferably Granny Smith or Fuji), peeled and diced
- 1 teaspoon lemon juice
- 1 teaspoon ground cinnamon
- 2 tablespoons brown sugar (adjust to taste)
- 1 cup shredded mozzarella cheese (or your favorite melty cheese)
- 2 tablespoons butter
- Maple syrup for drizzling (optional)
- Whipped cream for serving (optional)
Instructions
- In a medium bowl, toss the diced apples with lemon juice, ground cinnamon, and brown sugar until well combined.
- In a skillet over medium heat, melt 1 tablespoon of butter. Add the apple mixture and cook for about 5-7 minutes or until the apples are tender and caramelized. Remove from heat and set aside.
- Place one tortilla in the skillet over medium heat. Sprinkle half of the shredded cheese evenly over the tortilla, followed by the cooked apple mixture, and top with the remaining cheese. Place the second tortilla on top to create a stacked quesadilla.
- Add the remaining tablespoon of butter around the edges of the quesadilla (optional). Cook for about 3-4 minutes, or until the bottom is golden brown and the cheese has started to melt. Carefully flip the quesadilla and cook on the other side for another 3-4 minutes until golden brown and crispy.
- Once cooked, transfer the quesadilla to a cutting board, let it cool slightly, and then slice into wedges. Drizzle with maple syrup and serve with whipped cream if desired.
Notes
- Adjust the amount of brown sugar based on your sweetness preference.
- Feel free to substitute the cheese with a dairy-free option for a vegan option.
- Experiment with different types of apples for varied flavor profiles.
