  • 12 oz. brick-style cream cheese – room temperature (Cheesecake Filling)
  • 1/2 cup granulated sugar (Cheesecake Filling)
  • 3 Tablespoons all-purpose flour (Cheesecake Filling)
  • 1 teaspoon vanilla (Cheesecake Filling)
  • 1 egg (Cheesecake Filling)
  • 3/4 cup powdered sugar (Vanilla Icing)
  • 2 Tablespoons milk or cream (Vanilla Icing)
  • 1/2 teaspoon vanilla extract (Vanilla Icing)

Instructions

  1. Preheat the oven to 350°F and line a standard muffin pan with paper liners. This recipe makes about 16-18 muffins.
  2. In a bowl, stir together the ingredients for the crisp topping and set aside.
  3. Prepare the cinnamon sugar mixture and diced apples, tossing the apples with sugar and cinnamon, and set aside.
  4. Make the muffin mixture by beating the butter with sugar and vanilla, then adding eggs and the dry ingredients. Slowly mix in the milk.
