- 1 egg (Cheesecake Filling)
- 3/4 cup powdered sugar (Vanilla Icing)
- 2 Tablespoons milk or cream (Vanilla Icing)
- 1/2 teaspoon vanilla extract (Vanilla Icing)
Instructions
- Preheat the oven to 350°F and line a standard muffin pan with paper liners. This recipe makes about 16-18 muffins.
- In a bowl, stir together the ingredients for the crisp topping and set aside.
- Prepare the cinnamon sugar mixture and diced apples, tossing the apples with sugar and cinnamon, and set aside.
- Make the muffin mixture by beating the butter with sugar and vanilla, then adding eggs and the dry ingredients. Slowly mix in the milk.
- For the cheesecake filling, mix softened cream cheese with sugar, flour, vanilla, and an egg until combined, and set aside.
- Assemble the muffins by layering muffin batter, chopped apples, cheesecake filling, and topping with more batter and the crisp topping.
- Bake for 23-28 minutes until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes before transferring to a rack to cool completely.
- Prepare the glaze by mixing powdered sugar, milk (or cream), and vanilla, then drizzle over cooled muffins.
