Instructions
- Preheat the oven to 400°F. Pierce the sweet potatoes with a fork and place them on a baking sheet to roast for 45-55 minutes, or until tender 🔥.
- While the potatoes are roasting, melt the butter in a skillet over medium heat. Add the diced apples and cook until they begin to soften 🍳.
- Stir in the maple syrup, cinnamon, nutmeg, cloves, and salt. Cook for 2 more minutes until the apples are tender and the mixture is fragrant 🍎.
- Carefully slice the roasted sweet potatoes open and fluff the flesh inside with a fork 🍴.
- Spoon the spiced apple mixture into each sweet potato, then top with chopped pecans and dried cranberries 🥜.
- Serve warm, topped with a dollop of Greek yogurt or whipped cream if desired 🍦.
