Description

A warm and cozy dish featuring sweet potatoes stuffed with a spiced apple mixture, perfect for fall.


Ingredients

  • 4 medium sweet potatoes
  • 2 apples (Honeycrisp or Granny Smith), peeled and diced
  • 2 tablespoons unsalted butter
  • 1 tablespoon pure maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ cup chopped pecans
  • 2 tablespoons dried cranberries
  • Plain Greek yogurt or whipped cream (optional)

Instructions

  1. Preheat the oven to 400°F. Pierce each sweet potato several times with a fork and arrange on a baking sheet. Roast for 45 to 55 minutes until tender.
  2. In a skillet, melt butter over medium heat. Add diced apples and cook until softened, about 5 minutes. Stir in maple syrup, cinnamon, nutmeg, cloves, and salt. Cook for an additional 2 minutes, stirring occasionally.
  3. Slice roasted sweet potatoes lengthwise and fluff the flesh with a fork. Spoon the warm spiced apple mixture evenly into each potato cavity. Sprinkle pecans and dried cranberries on top.
  4. Serve warm, optionally topped with plain Greek yogurt or whipped cream.
