- 2 tablespoons Ketchup
- 1 tablespoon Yellow Mustard
- 1 tablespoon Sweet Pickle Relish
- 1 teaspoon White Vinegar
- 1/2 teaspoon Garlic Powder
- 1/4 teaspoon Paprika
- Pinch of Cayenne Pepper (optional)

Instructions
- Prepare the Bacon: Cook bacon until crispy. Crumble into small pieces and set aside.
- Combine Meatball Ingredients: In a large bowl, combine ground beef, crumbled bacon, panko bread crumbs, and milk. Gently mix.
- Prepare Wet Ingredients: In a separate small bowl, whisk together egg, diced yellow onion, minced garlic, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, and onion powder.
- Combine Wet and Dry: Pour the wet ingredients into the bowl with the ground beef mixture. Season generously with salt and black pepper. Gently mix until just combined.
- Stuff with Cheese: Take a small handful of the meat mixture (about 2-3 tablespoons) and flatten it slightly in the palm of your hand. Place a cube of sharp cheddar cheese in the center of the flattened meat. Carefully bring the edges of the meat up and around the cheese, sealing it completely. Gently roll the meatball between your palms to form a smooth, round shape.
- Baking Method: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the cheese-stuffed meatballs on the prepared baking sheet, leaving a little space between each one. Bake for 20-25 minutes, or until the meatballs are cooked through and the internal temperature reaches 160°F (71°C). Let the meatballs rest for a few minutes before serving.
- Pan-Frying Method: Heat a tablespoon of olive oil or vegetable oil in a large skillet over medium heat. Carefully place the cheese-stuffed meatballs in the skillet, leaving some space between each one. Cook the meatballs for about 8-10 minutes, turning them frequently to ensure they brown evenly on all sides. Once browned, reduce heat to low, cover, and cook for another 5-7 minutes until fully cooked.
- Make the Burger Sauce: In a medium bowl, combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, white vinegar, garlic powder, and paprika. Add cayenne pepper if desired. Whisk until smooth. Refrigerate until ready to serve.
- Assemble and Serve: Serve on toasted sesame seed buns with lettuce, tomato, red onion, pickle chips, and burger sauce. Alternatively, serve as an appetizer with burger sauce for dipping, over mashed potatoes, in a salad, or as a snack.
