Description

A delicious and elegant appetizer featuring creamy baked brie paired with sweet roasted plums and fresh thyme, all wrapped in flaky puff pastry.


Ingredients

  • 4 plums, sliced
  • 2 tablespoons salted butter
  • 3 tablespoons real maple syrup
  • 2 sprigs fresh thyme, plus more for serving
  • 1 sheet frozen puff pastry, thawed
  • 1 (8-ounce) wheel brie cheese
  • 1 rounded tablespoon fig jam or preserves
  • 1 egg, beaten
  • Coarse sugar, for sprinkling

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a baking dish, combine sliced plums, butter, maple syrup, and thyme. Roast for 20–25 minutes until caramelized.
  3. Place thawed puff pastry on a parchment-lined baking sheet. Set brie in the center.
  4. Trim a bit of the rind off the top of the brie (leave sides and bottom intact).
  5. Spread fig jam over the exposed top of the brie.
  6. Fold the puff pastry corners over the brie, sealing tightly.
  7. Brush the pastry with beaten egg and sprinkle with coarse sugar.
  8. Bake for 20–25 minutes, until pastry is golden brown.
  9. Cool slightly. Spoon roasted plums over the baked brie and garnish with extra thyme.
  10. Serve warm with bread, crackers, or fresh fruit.

Notes

  • You can substitute fig jam with apricot or cherry preserves.
  • Use firm but ripe plums for best texture after roasting.
  • Let the baked brie rest 5–10 minutes before slicing to prevent overflow.
  • This dish is best enjoyed fresh but leftovers can be reheated gently in the oven.
