A creamy and easy recipe for baked feta pasta that combines roasted cherry tomatoes and feta cheese for a delicious meal.

- 8 oz pasta
- 1 block feta cheese (about 7–8 oz)
- 2 cups cherry tomatoes
- 1/4 cup olive oil
- 3 cloves garlic
- 2 cups fresh spinach
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes
- 1 tsp Italian seasoning
- 1/4 cup fresh basil
Instructions
- Preheat oven to 400°F (200°C) and prepare tomatoes with olive oil.
- Place feta in center and season everything evenly.
- Bake for 30–35 minutes until tomatoes burst and feta softens.
- Cook pasta until al dente and reserve pasta water.
- Mash feta and tomatoes into a creamy sauce.
- Add pasta and mix until fully coated.
- Stir in spinach until wilted.
- Adjust consistency with pasta water if needed.
- Garnish with basil and serve warm.
Notes
- For added flavor, try using different herbs for seasoning.
- Leftovers can be stored in an airtight container in the refrigerator.
- Add a pinch of lemon juice for brightness in flavor.
