Description

A creamy and easy recipe for baked feta pasta that combines roasted cherry tomatoes and feta cheese for a delicious meal.


Ingredients

Scale
  • 8 oz pasta
  • 1 block feta cheese (about 78 oz)
  • 2 cups cherry tomatoes
  • 1/4 cup olive oil
  • 3 cloves garlic
  • 2 cups fresh spinach
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1 tsp Italian seasoning
  • 1/4 cup fresh basil

Instructions

  1. Preheat oven to 400°F (200°C) and prepare tomatoes with olive oil.
  2. Place feta in center and season everything evenly.
  3. Bake for 30–35 minutes until tomatoes burst and feta softens.
  4. Cook pasta until al dente and reserve pasta water.
  5. Mash feta and tomatoes into a creamy sauce.
  6. Add pasta and mix until fully coated.
  7. Stir in spinach until wilted.
  8. Adjust consistency with pasta water if needed.
  9. Garnish with basil and serve warm.

Notes

  • For added flavor, try using different herbs for seasoning.
  • Leftovers can be stored in an airtight container in the refrigerator.
  • Add a pinch of lemon juice for brightness in flavor.
