- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1/2 cup Parmesan cheese, grated
- 1 cup spinach, chopped finely
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon oregano, dried
- 1 teaspoon basil, dried
- Salt and pepper to taste
- 1/2 cup marinara sauce
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the ricotta, Parmesan, spinach, garlic, oregano, basil, salt, and pepper until smooth and creamy.
- Place the chicken breasts in a baking dish. Drizzle them with olive oil, seasoning both sides with salt and pepper.
- Evenly spread the ricotta mixture over each chicken breast.
- Pour the marinara sauce around the chicken in the baking dish.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and continue baking uncovered for an additional 15–20 minutes, or until the chicken is thoroughly cooked and the ricotta is lightly browned.
- Before serving, add fresh basil leaves for garnish to enhance the flavor.

- For a low-carb option, you can serve the chicken on a bed of zucchini noodles.
- Leftovers can be stored in the refrigerator for up to 3 days.
