Ingredients

  • 4 large eggs
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the chopped spinach to the skillet and cook for 3-4 minutes, or until wilted. Season with salt, pepper, and red pepper flakes if using.
  4. In a mixing bowl, whisk together the eggs and milk until well combined. Stir in the crumbled feta cheese.
  5. Grease a baking dish with a little olive oil. Spread the sautéed spinach evenly in the dish, creating small wells for the eggs.
  6. Pour the egg mixture over the spinach, ensuring the eggs are evenly distributed.
  7. Bake in the preheated oven for 20-25 minutes, or until the eggs are set and lightly golden on top.
