Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the chopped spinach to the skillet and cook for 3-4 minutes, or until wilted. Season with salt, pepper, and red pepper flakes if using.
- In a mixing bowl, whisk together the eggs and milk until well combined. Stir in the crumbled feta cheese.
- Grease a baking dish with a little olive oil. Spread the sautéed spinach evenly in the dish, creating small wells for the eggs.
- Pour the egg mixture over the spinach, ensuring the eggs are evenly distributed.
- Bake in the preheated oven for 20-25 minutes, or until the eggs are set and lightly golden on top.
