Description

Balsamic Marinated Beets are tender, flavorful beets coated in a tangy balsamic vinegar marinade, perfect for salads or as a side dish.


Ingredients

  • 4 medium-sized beets, washed and trimmed
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp honey (optional)
  • Salt and pepper, to taste
  • Fresh herbs (such as thyme or rosemary), chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast in the preheated oven for about 45-60 minutes, or until the beets are tender when pierced with a fork.
  3. Once the beets are cooked, allow them to cool slightly. Then, using a paper towel or your fingers, gently rub off the skins. Cut the beets into slices or cubes, depending on your preference.
  4. In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, honey (if using), salt, pepper, and chopped fresh herbs (if using). Adjust the seasoning to taste.
  5. Place the sliced or cubed beets in a shallow dish or container. Pour the marinade over the beets, ensuring they are well coated. Cover the dish or container and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to meld.
  6. Once marinated, the beets are ready to be used in salads, sandwiches, or as a flavorful side dish. Enjoy!
