Balsamic Marinated Beets are tender, flavorful beets coated in a tangy balsamic vinegar marinade, perfect for salads or as a side dish.

- 4 medium-sized beets, washed and trimmed
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp honey (optional)
- Salt and pepper, to taste
- Fresh herbs (such as thyme or rosemary), chopped (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast in the preheated oven for about 45-60 minutes, or until the beets are tender when pierced with a fork.
- Once the beets are cooked, allow them to cool slightly. Then, using a paper towel or your fingers, gently rub off the skins. Cut the beets into slices or cubes, depending on your preference.
- In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, honey (if using), salt, pepper, and chopped fresh herbs (if using). Adjust the seasoning to taste.
- Place the sliced or cubed beets in a shallow dish or container. Pour the marinade over the beets, ensuring they are well coated. Cover the dish or container and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to meld.
- Once marinated, the beets are ready to be used in salads, sandwiches, or as a flavorful side dish. Enjoy!

- For added sweetness, increase the amount of honey.
- Marinating overnight yields the best flavor.
