Ingredients

  • 4 chicken thighs, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp sake
  • 1 tbsp mirin
  • 1 tsp sesame oil
  • 4 cloves garlic, minced
  • 2 tsp ginger, minced
  • ½ tsp salt
  • ½ tsp white pepper
  • 1 egg white, beaten
  • Potato starch, for coating
  • Neutral oil, for deep frying
  • ½ cup mayonnaise
  • ¼ cup plus 1 tbsp Thai sweet chili sauce
  • 3 tbsp sriracha or chili sauce
  • 1 tbsp lemon juice

Instructions

  1. In a bowl, combine chicken pieces with soy sauce, sake, mirin, sesame oil, garlic, ginger, white pepper, salt, and beaten egg white. Mix thoroughly and refrigerate for 1 hour or overnight.
  2. In a separate bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, and lemon juice until smooth. Set aside.
  3. Dredge the marinated chicken pieces in potato starch, ensuring an even coating. Deep fry in hot neutral oil for 5 to 6 minutes until golden brown and crispy. Drain excess oil.
  4. Quickly toss the fried chicken with the prepared sauce until evenly coated. Serve immediately over hot steamed rice and garnish with sliced green onions or chives.
