Description
A refreshing and flavorful salad featuring marinated BBQ chicken skewers served over a bed of mixed greens and fresh vegetables, perfect for summer.

- 2 chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- 1 tablespoon BBQ sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, cut into chunks
- 1 red onion, cut into chunks
- 4 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 1 tablespoon fresh cilantro, chopped
- 2 tablespoons balsamic vinaigrette
- 1 tablespoon BBQ sauce for drizzling
Instructions
- Preheat your grill or grill pan to medium-high heat.
- Cut the chicken breasts into even-sized pieces, about 1 to 1.5 inches thick.
- In a small bowl, combine olive oil, BBQ sauce, smoked paprika, garlic powder, onion powder, ground black pepper, and salt to make a marinade.
- Pour the marinade over the chicken pieces and toss to coat. Let sit for at least 10 minutes to marinate.
- Prepare the vegetables by cutting them into chunks about the same size as the chicken pieces.
- Thread the marinated chicken and vegetables onto skewers, alternating between chicken and vegetables.
- Once the grill is preheated, place the skewers on the grill and cook for 12-15 minutes, turning occasionally until the chicken is fully cooked.
- Meanwhile, prepare the salad base by combining mixed salad greens and halved cherry tomatoes in a large bowl.
- Carefully remove the skewers from the grill once done cooking and let them rest for a few minutes.
- Remove the chicken and vegetables from the skewers and place them on top of the salad greens and tomatoes.
- Sprinkle crumbled feta cheese over the salad.
- Drizzle balsamic vinaigrette and light BBQ sauce over the salad.
- Garnish with fresh cilantro and toss gently to combine before serving.
Notes
- Make sure to marinate the chicken for at least 10 minutes, or longer for enhanced flavor.
- Add a pinch of cayenne pepper or chili powder for a spicier kick.
- If using wooden skewers, soak them in water for 30 minutes before grilling.
- Grilling on a charcoal grill can provide a smoky flavor.
- Feta can be substituted with goat cheese or blue cheese for a different flavor profile.
