Description

A refreshing and flavorful salad featuring marinated BBQ chicken skewers served over a bed of mixed greens and fresh vegetables, perfect for summer.

Ingredients

Scale
  • 2 chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 tablespoon BBQ sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, cut into chunks
  • 1 red onion, cut into chunks
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon fresh cilantro, chopped
  • 2 tablespoons balsamic vinaigrette
  • 1 tablespoon BBQ sauce for drizzling

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Cut the chicken breasts into even-sized pieces, about 1 to 1.5 inches thick.
  3. In a small bowl, combine olive oil, BBQ sauce, smoked paprika, garlic powder, onion powder, ground black pepper, and salt to make a marinade.
  4. Pour the marinade over the chicken pieces and toss to coat. Let sit for at least 10 minutes to marinate.
  5. Prepare the vegetables by cutting them into chunks about the same size as the chicken pieces.
  6. Thread the marinated chicken and vegetables onto skewers, alternating between chicken and vegetables.
  7. Once the grill is preheated, place the skewers on the grill and cook for 12-15 minutes, turning occasionally until the chicken is fully cooked.
  8. Meanwhile, prepare the salad base by combining mixed salad greens and halved cherry tomatoes in a large bowl.
  9. Carefully remove the skewers from the grill once done cooking and let them rest for a few minutes.
  10. Remove the chicken and vegetables from the skewers and place them on top of the salad greens and tomatoes.
  11. Sprinkle crumbled feta cheese over the salad.
  12. Drizzle balsamic vinaigrette and light BBQ sauce over the salad.
  13. Garnish with fresh cilantro and toss gently to combine before serving.

Notes

  • Make sure to marinate the chicken for at least 10 minutes, or longer for enhanced flavor.
  • Add a pinch of cayenne pepper or chili powder for a spicier kick.
  • If using wooden skewers, soak them in water for 30 minutes before grilling.
  • Grilling on a charcoal grill can provide a smoky flavor.
  • Feta can be substituted with goat cheese or blue cheese for a different flavor profile.
