Ingredients

  • 2 cups dry roasted peanuts (salted or unsalted)
  • 1 package (11 oz) caramel bits or 40 unwrapped soft caramels
  • 2 tablespoons heavy cream
  • 1 1/2 cups semi-sweet or milk chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
  • Sea salt flakes (optional, for topping)

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, melt caramel bits with heavy cream in 30-second intervals, stirring until smooth.
  3. Stir in peanuts until fully coated with caramel.
  4. Drop spoonfuls of the caramel-peanut mixture onto the prepared baking sheet, spacing them out.
  5. Chill in the fridge for 15–20 minutes until set.
  6. Melt chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.
  7. Dip each caramel-peanut cluster into the melted chocolate or spoon the chocolate over the tops.
  8. Place back on the baking sheet and sprinkle with sea salt if desired.
  9. Chill until the chocolate is set, about 15–20 minutes.
