- 2 cups dry roasted peanuts (salted or unsalted)
- 1 package (11 oz) caramel bits or 40 unwrapped soft caramels
- 2 tablespoons heavy cream
- 1 1/2 cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
- Sea salt flakes (optional, for topping)
Instructions
- Line a baking sheet with parchment paper.
- In a microwave-safe bowl, melt caramel bits with heavy cream in 30-second intervals, stirring until smooth.
- Stir in peanuts until fully coated with caramel.
- Drop spoonfuls of the caramel-peanut mixture onto the prepared baking sheet, spacing them out.
- Chill in the fridge for 15–20 minutes until set.
- Melt chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.
- Dip each caramel-peanut cluster into the melted chocolate or spoon the chocolate over the tops.
- Place back on the baking sheet and sprinkle with sea salt if desired.
- Chill until the chocolate is set, about 15–20 minutes.
