- For the Cherry Layer:
- 2 cups pitted cherries (fresh or frozen)
- ¼ cup sugar
- 1 tbsp lemon juice
- 2 tbsp cherry liqueur (such as Kirsch) or cherry juice
- For the Cream Layer:
- 8 oz mascarpone cheese
- 1 cup heavy cream
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- For the Coffee Layer:
- 1 cup strong brewed coffee, cooled
- 2 tbsp coffee liqueur (optional)
- For Assembly:
- 20–24 ladyfinger cookies
- 3 oz dark chocolate, grated or shaved
- Cocoa powder, for dusting
Instructions
- Prepare the Cherry Layer: In a saucepan over medium heat, combine the cherries, sugar, and lemon juice. Cook for about 5 minutes, stirring occasionally, until the cherries soften and release their juices. Remove from heat and stir in the cherry liqueur. Let cool.
- Make the Cream Layer: In a mixing bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and thick. Set aside.
- Prepare the Coffee Mixture: Combine the brewed coffee with coffee liqueur (if using) in a shallow bowl.
- Assemble the Tiramisu: Quickly dip half of the ladyfingers into the coffee mixture and arrange them in a single layer in a serving dish or individual glasses. Spread half of the mascarpone mixture over the ladyfingers. Spoon half of the cherry mixture over the mascarpone layer, then sprinkle with grated chocolate. Repeat the layers with the remaining ladyfingers, mascarpone cream, and cherries. Finish with a dusting of cocoa powder and more grated chocolate on top.
- Chill and Serve: Cover and refrigerate for at least 4 hours (preferably overnight) to allow the flavors to meld. Serve chilled and enjoy!

- For best results, allow the tiramisu to chill overnight.
- Feel free to adjust the amount of sugar based on the sweetness of the cherries.
