Instructions

- In a medium saucepan, combine granulated sugar, light corn syrup, and water. Bring to a boil over medium-high heat while stirring until the sugar dissolves. Stop stirring and allow the mixture to cook until it reaches the hard crack stage, about 300°F (150°C) on a candy thermometer.
- Once the temperature is reached, remove the saucepan from the heat. Stir in the black food coloring and vanilla extract; be cautious as the mixture may bubble.
- Quickly dip each apple into the hot candy mixture, swirling to coat evenly. Lift the apple out and let excess candy drip off before placing it onto the prepared baking sheet.
