Description

Delicious blueberry crumble bars with a buttery oat topping.


Ingredients

Scale
  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a medium bowl, combine the fresh blueberries, granulated sugar, lemon juice, and cornstarch. Gently toss to coat the blueberries and set aside to marinate for about 10 minutes.
  3. In another bowl, mix together the all-purpose flour, rolled oats, brown sugar, baking powder, and salt. Pour in the melted butter and vanilla extract, and stir until the mixture is crumbly and well combined.
  4. Press half of the oat mixture into the bottom of the prepared baking dish to form a crust. Spread the blueberry mixture evenly over the crust.
  5. Sprinkle the remaining oat mixture over the blueberries, covering them completely.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the blueberries are bubbling.
  7. Allow the bars to cool in the pan for at least 15 minutes before slicing into squares.

Notes

  • For a sweeter taste, adjust the sugar according to your preference.
  • These bars can be served warm or chilled.
  • Store leftovers in an airtight container in the refrigerator.
