Delicious blueberry crumble bars with a buttery oat topping.

- 2 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- In a medium bowl, combine the fresh blueberries, granulated sugar, lemon juice, and cornstarch. Gently toss to coat the blueberries and set aside to marinate for about 10 minutes.
- In another bowl, mix together the all-purpose flour, rolled oats, brown sugar, baking powder, and salt. Pour in the melted butter and vanilla extract, and stir until the mixture is crumbly and well combined.
- Press half of the oat mixture into the bottom of the prepared baking dish to form a crust. Spread the blueberry mixture evenly over the crust.
- Sprinkle the remaining oat mixture over the blueberries, covering them completely.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the blueberries are bubbling.
- Allow the bars to cool in the pan for at least 15 minutes before slicing into squares.
Notes
- For a sweeter taste, adjust the sugar according to your preference.
- These bars can be served warm or chilled.
- Store leftovers in an airtight container in the refrigerator.
