- 1 ripe mango, peeled and diced
- 1/2 cup diced cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese (optional)
- 1 tbsp lime juice
- 1 tbsp orange juice
- 1 tsp honey or agave syrup
- Salt and pepper to taste
- Mixed greens or baby spinach, for serving
Instructions
- In a large mixing bowl, combine blueberries, diced mango, cucumber, red onion, and mint.
- In a small bowl, whisk together lime juice, orange juice, honey, salt, and pepper.
- Pour the dressing over the fruit and veggie mixture and toss gently to coat.
- Serve over a bed of mixed greens or baby spinach.
- Sprinkle with feta cheese just before serving, if using.
- Serve immediately or chill for 15–20 minutes to enhance flavors.

- For a vegan option, omit the feta cheese.
