Description

A refreshing salad featuring a delightful combination of blueberries and mango, perfect for a light meal or side dish.


Ingredients

  • 1 cup fresh blueberries
  • 1 ripe mango, peeled and diced
  • 1/2 cup diced cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh mint
  • 1/4 cup crumbled feta cheese (optional)
  • 1 tbsp lime juice
  • 1 tbsp orange juice
  • 1 tsp honey or agave syrup
  • Salt and pepper to taste
  • Mixed greens or baby spinach, for serving

Instructions

  1. In a large mixing bowl, combine blueberries, diced mango, cucumber, red onion, and mint.
  2. In a small bowl, whisk together lime juice, orange juice, honey, salt, and pepper.
  3. Pour the dressing over the fruit and veggie mixture and toss gently to coat.
  4. Serve over a bed of mixed greens or baby spinach.
  5. Sprinkle with feta cheese just before serving, if using.
  6. Serve immediately or chill for 15–20 minutes to enhance flavors.
