- 4 cups pancake mix
- 1½ cups fresh blueberries
- 3 cups water
- 1 lb breakfast sausage, cooked and drained (turkey preferred)
- ⅓ cup maple syrup
Instructions
- Brown the turkey breakfast sausage in a skillet, breaking it into small pieces. Drain thoroughly and set aside.
- In a large mixing bowl, prepare the pancake batter by combining the pancake mix and water according to the package instructions.
- Fold the cooked sausage, blueberries, and maple syrup into the batter. (If you like, set aside a small handful of sausage and blueberries to sprinkle on top.)
- Grease a 9×13-inch baking dish with cooking spray, then pour the mixture evenly into the pan.
- Add the reserved sausage and blueberries over the surface.
- Bake at 375°F for 40–45 minutes, or until the center tests clean with a toothpick.
- Slice, drizzle with extra maple syrup if desired, and serve warm.
Notes
- For a lighter option, use a low-fat pancake mix.
- Make sure to drain the sausage well to prevent excess grease in the casserole.
- This casserole can be prepared ahead of time, just bake when ready to serve.
