Description

Delicious and refreshing Blueberry Yogurt Clusters, perfect for a cool snack.

Ingredients

Scale
  • 1 cup fresh blueberries
  • 1 cup Greek yogurt
  • ½ teaspoon vanilla extract
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • ½ cup granola (optional, for added crunch)
  • ½ cup melted dark chocolate (optional, for dipping)

Instructions

  1. In a mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir well.
  2. Gently fold in the fresh blueberries until fully coated in the yogurt mixture.
  3. Line a baking sheet with parchment paper. Using a spoon, scoop small clusters of the blueberry-yogurt mixture onto the sheet.
  4. (Optional) Sprinkle granola over the clusters for extra texture.
  5. Freeze for at least 2 hours or until completely firm.
  6. (Optional) Once frozen, dip each cluster in melted dark chocolate and return to the freezer for another 10 minutes to set.
  7. Enjoy straight from the freezer for a cool, creamy, and refreshing snack!

Notes

  • Can be made vegan by using maple syrup instead of honey.
  • Granola is optional but adds a nice crunch.
  • Dark chocolate dip is also optional, but it enhances the flavor.
