Description

Delicious Boston Cream Pie Cookies featuring a vanilla cookie base, creamy custard filling, and rich chocolate ganache.


Ingredients

  • ¾ cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup milk
  • 1 cup milk (for custard)
  • 2 egg yolks
  • ¼ cup sugar (for custard)
  • 1 tbsp cornstarch
  • 1 tbsp butter (for custard)
  • 1 tsp vanilla extract (for custard)
  • ½ cup semi-sweet chocolate chips
  • ¼ cup heavy cream

Instructions

  1. Make the custard: In a saucepan over medium heat, whisk milk, egg yolks, sugar, and cornstarch. Cook, stirring constantly, until thickened (about 5–7 minutes). Remove from heat, stir in butter and vanilla. Let cool completely, then chill.
  2. Preheat oven: Set oven to 350°F (175°C). Line a baking sheet with parchment paper.
  3. Make the cookie dough: Cream butter and sugar until fluffy. Beat in egg and vanilla. Mix in flour, baking powder, and salt. Stir in milk until smooth.
  4. Bake cookies: Drop tablespoonfuls of dough onto baking sheet. Flatten slightly. Bake for 10–12 minutes until edges are lightly golden. Cool completely.
  5. Make the ganache: Heat cream until just simmering. Pour over chocolate chips and let sit 1 minute. Stir until smooth and glossy.
  6. Assemble: Spread or pipe chilled custard onto the flat side of one cookie, top with another. Spoon ganache over the top and let set.
