- 2 cups roasted peanuts unsalted
- ¾ cup powdered sugar
- ½ teaspoon fine sea salt
- 2 tablespoons honey
- 1 tablespoon coconut oil melted
Instructions
- Add the peanuts to a food processor and pulse until they become a fine, slightly oily crumb.
- Do not over-blend — the texture should resemble coarse sand, not peanut butter.
- Add the powdered sugar and salt. Pulse again until fully blended.
- Pour in the honey and melted coconut oil.
- Process until the mixture begins to clump and looks slightly moist.
- Line a small baking dish (about 8×8 inches) with parchment paper.
- Transfer the mixture into the dish and press it down very firmly using the back of a spoon or the bottom of a glass to compact it tightly.
- Refrigerate for at least 30 minutes to set.
- Lift out using the parchment paper and cut into small squares or rectangles.
- Serve chilled or at room temperature.
