A delicious and sweet side dish made with glazed baby carrots, perfect for any meal.

- 1 lb baby carrots
- 3 tablespoons unsalted butter
- 0.25 cup brown sugar, packed
- 0.5 teaspoon ground cinnamon
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoons apple cider vinegar
- 0 (optional) Fresh parsley, chopped for garnish
Instructions
- In a large pot, bring water to a boil. Add the baby carrots and cook for about 5 minutes until they are slightly tender. Drain and set aside.
- In the same pot, melt the butter over medium heat.
- Stir in the brown sugar, ground cinnamon, salt, and black pepper. Mix until the sugar has dissolved and a syrup begins to form.
- Add the cooked carrots back into the pot and stir to coat them evenly with the glaze.
- Drizzle the apple cider vinegar over the carrots and continue to cook for an additional 5 minutes, stirring occasionally until the carrots are evenly glazed and tender.
- Remove from heat and let sit for a couple of minutes to allow the glaze to thicken slightly.
- Transfer the glazed carrots to a serving dish and sprinkle with fresh chopped parsley if desired.
Notes
- Ensure not to overcook the carrots to maintain their slight crunch.
- Fresh parsley adds a nice color and flavor, but is optional.
- This dish can be made ahead of time and reheated before serving.
