Description

A delicious and sweet side dish made with glazed baby carrots, perfect for any meal.


Ingredients

  • 1 lb baby carrots
  • 3 tablespoons unsalted butter
  • 0.25 cup brown sugar, packed
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons apple cider vinegar
  • 0 (optional) Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, bring water to a boil. Add the baby carrots and cook for about 5 minutes until they are slightly tender. Drain and set aside.
  2. In the same pot, melt the butter over medium heat.
  3. Stir in the brown sugar, ground cinnamon, salt, and black pepper. Mix until the sugar has dissolved and a syrup begins to form.
  4. Add the cooked carrots back into the pot and stir to coat them evenly with the glaze.
  5. Drizzle the apple cider vinegar over the carrots and continue to cook for an additional 5 minutes, stirring occasionally until the carrots are evenly glazed and tender.
  6. Remove from heat and let sit for a couple of minutes to allow the glaze to thicken slightly.
  7. Transfer the glazed carrots to a serving dish and sprinkle with fresh chopped parsley if desired.

Notes

  • Ensure not to overcook the carrots to maintain their slight crunch.
  • Fresh parsley adds a nice color and flavor, but is optional.
  • This dish can be made ahead of time and reheated before serving.
