Description

Butterscotch Delight is a creamy, layered dessert with a delicious combination of graham cracker crust, cream cheese filling, butterscotch pudding, and a fluffy whipped topping. It’s a perfect treat for any occasion.


Ingredients

  • 1½ cups cinnamon graham cracker crumbs
  • 3 tablespoons sugar
  • 6 tablespoons butter, melted
  • 16 ounces cream cheese, softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla
  • 1 cup whipping cream
  • 3.4 ounces instant butterscotch pudding
  • ¾ cup butterscotch chips, roughly chopped and divided
  • 2 tablespoons heavy cream
  • 8 ounces cool whip
  • chopped butterscotch chips and crumbled cinnamon graham cracker crumbs for garnish (optional)

Instructions

  1. In a medium bowl mix together the graham cracker crumbs, sugar, and melted butter. Press the mixture into an 8×8 dish. Flatten the mixture using the bottom of a flat glass. Place in the freezer for 30 minutes.
  2. In a large mixing bowl place the softened cream cheese, powdered sugar, and vanilla extract. Using a hand mixer, combine until light and fluffy and no lumps remain. Set aside.
  3. In a chilled medium mixing bowl place the heavy whipping cream. Using a hand mixer on high beat the cream until stiff peaks form, about 5 minutes.
  4. Gently add the whipped cream to the cream cheese mixture and fold together with a rubber spatula. Once combined, spoon half of the cream cheese/whipped cream mixture on top of the graham cracker crust. Set the other half of the mixture aside.
  5. Place the 8×8 dish in the refrigerator while preparing the next step.
  6. In the bowl with the remaining half of the cream cheese/whipping cream mixture, add the dry butterscotch pudding mix, chopped butterscotch chips, and heavy cream. Gently fold together until combined and solid in color.
  7. Spoon the mixture on top of layer two in the 8×8 dish and spread evenly. This layer will be quite thick.
  8. Spread the Cool Whip on top of the 8×8 dish as the last layer. Garnish with remaining ¼ cup chopped butterscotch chips and drizzle with butterscotch sauce.
  9. Chill at least one hour before serving. Ideally, chill for 2 hours.

  • Chilling the dessert for longer enhances the flavors.
  • Optional garnishes include extra butterscotch chips and butterscotch sauce for drizzling.
