Description

Delicious Byron Bay Chocolate Chip Cookies that everyone loves, featuring a perfect blend of flavors and textures.

Ingredients

Scale
  • 225g (1 cup) unsalted butter, softened
  • 200g (1 cup) granulated sugar
  • 200g (1 cup packed) light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 360g (3 cups) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 340g (12 oz) semi-sweet chocolate chips
  • Optional: 100g chopped walnuts or pecans
  • Optional: Flaky sea salt, for sprinkling

Instructions

  1. Cream the Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.
  2. Incorporate the Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually Add Dry Ingredients to Wet Ingredients: Gradually mix the dry ingredients into the wet ingredients on low speed until just combined.
  5. Fold in the Chocolate Chips (and Nuts, if using): Gently fold in the chocolate chips and nuts until evenly distributed.
  6. Chill the Dough: Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes.
  7. Preheat the Oven: Preheat your oven to 190°C (375°F).
  8. Prepare Baking Sheets: Line baking sheets with parchment paper or silicone baking mats.
  9. Scoop the Dough: Drop rounded tablespoons of dough onto the sheets, leaving about 2 inches between each cookie.
  10. Optional: Sprinkle with Sea Salt: Sprinkle the tops with flaky sea salt if desired.
  11. Bake the Cookies: Bake for 9-11 minutes, or until edges are golden brown and centers are slightly soft.
  12. Cool the Cookies: Let the cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Using good quality chocolate chips enhances the flavor.
  • Chilling the dough helps prevent the cookies from spreading too much.
