- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 lb pasta (penne, fettuccine, or your favorite shape)
- 8 oz cream cheese, softened
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
- 1 tablespoon Cajun seasoning (or more, to taste)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: Fresh parsley, chopped
- Optional: Extra Parmesan cheese
- Optional: Red pepper flakes
Instructions
- In a large bowl, combine chicken pieces with Cajun seasoning, garlic powder, and black pepper.
- Heat olive oil and butter in a skillet over medium heat. Add seasoned chicken and cook until browned and cooked through.
- Cook pasta according to package instructions. Drain and set aside.
- In the same skillet, add garlic, bell peppers, and sun-dried tomatoes. Sauté until vegetables are tender.
- Add cream cheese, heavy cream, and chicken broth to the skillet. Stir until smooth and combined.
- Mix in cooked pasta, Parmesan cheese, and additional Cajun seasoning. Stir well to combine and heat through.
- Garnish with green onions, fresh parsley, extra Parmesan cheese, and red pepper flakes, if desired. Serve warm.
