Cajun Chicken Pasta is a delightful and flavorful dish combining tender chicken, creamy sauce, and pasta with a kick of Cajun spices.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 lb pasta (penne, fettuccine, or your favorite shape)
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1 tablespoon Cajun seasoning (or more, to taste)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: Fresh parsley, chopped
  • Optional: Extra Parmesan cheese
  • Optional: Red pepper flakes

Instructions

  1. In a large bowl, combine chicken pieces with Cajun seasoning, garlic powder, and black pepper.
  2. Heat olive oil and butter in a skillet over medium heat. Add seasoned chicken and cook until browned and cooked through.
  3. Cook pasta according to package instructions. Drain and set aside.
  4. In the same skillet, add garlic, bell peppers, and sun-dried tomatoes. Sauté until vegetables are tender.
  5. Add cream cheese, heavy cream, and chicken broth to the skillet. Stir until smooth and combined.
  6. Mix in cooked pasta, Parmesan cheese, and additional Cajun seasoning. Stir well to combine and heat through.
  7. Garnish with green onions, fresh parsley, extra Parmesan cheese, and red pepper flakes, if desired. Serve warm.
