- 1 cup orzo pasta
- 2 cups cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 1/2 cup fresh basil leaves, torn
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process.
- In a large mixing bowl, combine the halved cherry tomatoes, mozzarella balls, and torn basil leaves.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the tomato and mozzarella mixture and toss gently to combine.
- Add the cooked orzo to the bowl and mix until everything is well incorporated. Adjust seasoning with additional salt and pepper if needed.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld. Enjoy this refreshing salad as a side dish or a light main course.

- For added flavor, consider using heirloom tomatoes.
