Description

A refreshing twist on the classic Caprese salad with orzo pasta, cherry tomatoes, mozzarella, and basil.


Ingredients

  • 1 cup orzo pasta
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1/2 cup fresh basil leaves, torn
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the halved cherry tomatoes, mozzarella balls, and torn basil leaves.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the tomato and mozzarella mixture and toss gently to combine.
  4. Add the cooked orzo to the bowl and mix until everything is well incorporated. Adjust seasoning with additional salt and pepper if needed.
