Description

A delightful dessert featuring a creamy custard topped with a caramelized sugar layer, set on a buttery graham cracker crust.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 2 egg yolks
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 2 teaspoons vanilla extract

Instructions

  1. Combine graham cracker crumbs with melted butter until evenly moistened. Press firmly into the bottom of a 9×9 inch square baking dish. Refrigerate for 30 minutes to set.
  2. In a large bowl, whisk together eggs, egg yolks, granulated sugar, and vanilla extract until well combined. In a saucepan, heat heavy cream and milk until just simmering. Slowly pour the hot cream mixture into the egg mixture, whisking constantly.
  3. Pour the custard mixture over the chilled crust. Place the baking dish in a larger roasting pan and add enough hot water to reach halfway up the sides of the dish. Bake at 325°F for 45-50 minutes until the custard is set but still slightly jiggly in the center.
  4. Remove from water bath and let cool completely. Refrigerate for at least 3 hours or overnight. Mix brown sugar with 2 tablespoons of water and spread evenly over the top of the chilled custard. Place under a broiler for 2-3 minutes until caramelized, watching carefully to prevent burning.
  5. Let the caramelized top cool and harden for about 15 minutes. Cut into squares and top each square with fresh raspberries before serving.

Notes

  • For the best caramelized top, make sure the custard is thoroughly chilled before broiling.
  • Watch the broiler carefully as the sugar can go from perfectly caramelized to burnt in seconds.
  • You can prepare this dessert up to 2 days ahead, adding the raspberries just before serving.
  • For cleaner cuts, dip your knife in hot water and wipe dry between each slice.
