Description

A crisp, creamy, and tangy slaw that’s perfect for any season, combining sweet and tart apples with crunchy carrots.


Ingredients

Scale
  • 1 large sweet red apple
  • 1 large tart green apple
  • 1 tablespoon freshly-squeezed lemon juice
  • 10 ounces matchstick carrots (about 3 cups)
  • 1/3 cup mayonnaise
  • 1/3 cup plain yogurt
  • 2 tablespoons honey
  • 2 teaspoons rice wine vinegar
  • Salt & freshly ground black pepper, to taste
  • 3/4 cup crumbled feta cheese (about 3 ounces)
  • 1/2 cup dried sweetened cranberries

Instructions

  1. Core both apples, slice thinly, then cut into matchsticks to make about 3 1/2 cups. Place them in a large bowl and toss with lemon juice.
  2. Add the matchstick carrots to the apples and stir to combine.
  3. In a small bowl, whisk together the mayonnaise, yogurt, honey, vinegar, salt, and pepper until smooth.
  4. Pour the dressing over the apple and carrot mixture, then stir until everything is evenly coated.
  5. Mix in the crumbled feta and dried cranberries, then taste and adjust salt and pepper if needed.
  6. Refrigerate for at least 30 minutes to let the flavors blend. If liquid gathers at the bottom, serve with a slotted spoon.

Notes

  • Make sure to core and slice the apples just before mixing with the lemon juice to prevent browning.
  • Feel free to adjust the amount of honey to suit your taste preference.
  • This slaw can be made a few hours in advance for a party.
