Ingredients

- 1 box carrot cake mix
- 8 ounces cream cheese, softened
- 12 ounces white candy melts
- 4 ounces orange candy melts
- Optional: chopped pecans or walnuts
- Optional: sprinkles for decoration
Instructions
- Preheat the oven to 350°F and spread the dry carrot cake mix on a baking sheet.
- Bake the cake mix for about 5 minutes to heat treat it and make it safe to eat.
- Allow the cake mix to cool completely.
- In a mixing bowl combine the cooled cake mix and softened cream cheese.
- Mix until a thick smooth dough forms.
- Refrigerate the mixture for about 1 hour until firm.
- Scoop small portions and roll them into 1 inch balls.
- Place the balls on a parchment lined tray and chill for 20 minutes.
- Melt the white candy melts in a microwave safe bowl in short intervals stirring until smooth.
- Dip each carrot cake ball into the melted candy coating and place back on the parchment lined tray.
- Melt the orange candy melts and drizzle over the coated bites.
- Allow the coating to set completely before serving.
Notes
- Store the cheesecake bites in an airtight container in the fridge.
- These bites can be decorated with chopped nuts or sprinkles for extra flair.
