- 1 pound fresh spinach, washed and trimmed
- 3 tablespoons olive oil
- 3 cloves garlic, thinly sliced
- 1/4 cup pine nuts
- Salt and pepper to taste
- Juice of 1 lemon
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced garlic and sauté for 1-2 minutes, or until fragrant and lightly golden, being careful not to burn it.
- Add the pine nuts to the skillet and toast them for about 2-3 minutes, stirring frequently until they are golden brown.
- Increase the heat to medium-high and add the fresh spinach to the skillet.
- Sauté for 3-4 minutes, or until the spinach is wilted and tender.
- Season with salt, pepper, and red pepper flakes (if using).
- Remove from heat and squeeze fresh lemon juice over the sautéed spinach before serving.
Notes
- For an extra kick, increase the amount of red pepper flakes.
- This dish pairs well with grilled meats or as a side to pasta dishes.
- Make sure the skillet is large enough for all the spinach to fit without overcrowding.
