Description

A quick and flavorful Catalan dish featuring fresh spinach sautéed with garlic, pine nuts, and a hint of lemon.


Ingredients

  • 1 pound fresh spinach, washed and trimmed
  • 3 tablespoons olive oil
  • 3 cloves garlic, thinly sliced
  • 1/4 cup pine nuts
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced garlic and sauté for 1-2 minutes, or until fragrant and lightly golden, being careful not to burn it.
  3. Add the pine nuts to the skillet and toast them for about 2-3 minutes, stirring frequently until they are golden brown.
  4. Increase the heat to medium-high and add the fresh spinach to the skillet.
  5. Sauté for 3-4 minutes, or until the spinach is wilted and tender.
  6. Season with salt, pepper, and red pepper flakes (if using).
  7. Remove from heat and squeeze fresh lemon juice over the sautéed spinach before serving.

Notes

  • For an extra kick, increase the amount of red pepper flakes.
  • This dish pairs well with grilled meats or as a side to pasta dishes.
