Description

A delightful dessert combining layers of cake, peppermint cookies, and a crunchy brittle topping for a festive treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup whole milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup hot water
  • 1 cup chocolate sandwich cookies with mint filling, roughly chopped
  • 1/2 tsp peppermint extract
  • 1 cup semisweet chocolate chips
  • 1/2 cup granulated sugar
  • 2 tbsp water
  • 1/4 cup chopped roasted almonds
  • 1/4 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8-inch (20 cm) square baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the whole milk, vegetable oil, egg, and vanilla extract to the dry mixture and mix until smooth.
  4. Gently stir in the hot water until just incorporated.
  5. Pour the batter into the prepared pan and bake for 20-22 minutes or until a toothpick comes out clean. Let it cool completely.
  6. Evenly distribute the chopped chocolate sandwich cookies on top of the cooled cake and drizzle with peppermint extract.
  7. In a small saucepan, heat sugar and water until dissolved, then cook without stirring until golden amber, about 4-5 minutes.
  8. Pour hot caramel onto a parchment-lined baking sheet; sprinkle with almonds and peppermint candies. Let it harden.
  9. Melt the chocolate chips in intervals until smooth, then drizzle over the cookie-topped cake layer.
  10. Place the hardened brittle shards on top of the melted chocolate, pressing lightly to adhere.
  11. Refrigerate for 15 minutes to set the chocolate, then slice and serve.

Notes

  • Be careful when melting sugar; it can get very hot.
  • This dessert can be stored in an airtight container for up to a week.
  • For an extra festive touch, you can add more crushed peppermint candies on top before serving.
