Instructions
- Preheat the Oven: Begin by preheating your oven to 400°F (200°C).
- Sauté Aromatics: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the diced onion and sauté until translucent. Add garlic and sauté for an additional minute.
- Cook Seafood: Add the shrimp and scallops to the skillet, cooking until just opaque. Season with thyme, paprika, salt, and pepper. This should take about 3-4 minutes. Transfer seafood mixture to a bowl and set aside.
- Make the Sauce: In the same pan, add remaining butter, then whisk in flour. Cook for about 1-2 minutes until flour is a light golden color. Gradually pour in seafood stock and heavy cream, whisking continuously until the mixture thickens and becomes creamy.
- Combine Ingredients: Return the seafood mixture to the skillet, and mix in the frozen mixed vegetables. Stir well until everything is combined. Cook for an additional 3-5 minutes.
- Prepare Biscuit Topping: In a separate bowl, prepare the Cheddar Bay biscuit mixture according to package directions or use homemade dough if preferred. Mix in the shredded Cheddar cheese for added flavor.
- Assemble and Bake: Pour the seafood filling into a greased baking dish. Top evenly with the Cheddar Bay biscuit mixture. Bake in the preheated oven for 25-30 minutes, or until the biscuit topping is golden brown and the seafood mixture is bubbling.
