Instructions
- Make the Cheesecake Filling: In a medium bowl, beat the cream cheese with an electric mixer until smooth and creamy. Add the powdered sugar, vanilla extract, and flour, and mix until fully combined. Once smooth, scoop out about 1 tablespoon of the cheesecake filling and roll it into a ball. Set the balls on a baking sheet or plate and freeze for about 30 minutes.
- Make the Cookie Dough: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. In a medium bowl, whisk together the flour, baking soda, and salt. In a large bowl, use an electric mixer to cream together the butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes). Add the egg and vanilla extract, mixing until fully incorporated. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
- Assemble the Cookies: Take a heaping tablespoon of cookie dough and flatten it out in your hand to form a disc. Place one of the frozen cheesecake filling balls in the center of the dough. Carefully fold the dough around the cheesecake filling, pinching the edges together to completely seal the filling inside. Roll the dough into a ball and place it on the prepared baking sheet. Repeat with the remaining dough and cheesecake filling.
- Bake the Cookies: Bake the cookies in the preheated oven for 10-12 minutes or until the edges are golden and the center looks set. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
