Description

Cheesy Chicken Rigatoni is a cozy dinner dish made with pasta, chicken, and a blend of cheeses baked to perfection.


Ingredients

  • 12 oz rigatoni pasta
  • 2 cups shredded cooked chicken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the rigatoni pasta according to the package instructions until it is al dente. Drain and set aside.
  3. In a large skillet, warm the olive oil over medium heat. Add the chopped onion and minced garlic, then sauté for 3-4 minutes until the onion becomes translucent.
  4. Mix in the shredded chicken, marinara sauce, Italian seasoning, and season with salt and pepper. Continue cooking for another 5 minutes to blend the flavors.
  5. In a large mixing bowl, combine the cooked rigatoni, ricotta cheese, and half of the mozzarella cheese. Add the chicken mixture and stir until everything is well combined.
  6. Transfer the pasta mixture to a greased 9×13 inch baking dish. Sprinkle the remaining mozzarella cheese and grated Parmesan cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and has turned golden brown.
  8. Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired, then serve.

Notes

  • Make sure not to overcook the rigatoni, as it will cook further in the oven.
  • You can substitute rotisserie chicken for shredded cooked chicken to save time.
  • The dish can be assembled ahead of time and refrigerated before baking.
