Cheesy Chicken Rigatoni is a cozy dinner dish made with pasta, chicken, and a blend of cheeses baked to perfection.

- 12 oz rigatoni pasta
- 2 cups shredded cooked chicken
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the rigatoni pasta according to the package instructions until it is al dente. Drain and set aside.
- In a large skillet, warm the olive oil over medium heat. Add the chopped onion and minced garlic, then sauté for 3-4 minutes until the onion becomes translucent.
- Mix in the shredded chicken, marinara sauce, Italian seasoning, and season with salt and pepper. Continue cooking for another 5 minutes to blend the flavors.
- In a large mixing bowl, combine the cooked rigatoni, ricotta cheese, and half of the mozzarella cheese. Add the chicken mixture and stir until everything is well combined.
- Transfer the pasta mixture to a greased 9×13 inch baking dish. Sprinkle the remaining mozzarella cheese and grated Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and has turned golden brown.
- Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired, then serve.
Notes
- Make sure not to overcook the rigatoni, as it will cook further in the oven.
- You can substitute rotisserie chicken for shredded cooked chicken to save time.
- The dish can be assembled ahead of time and refrigerated before baking.
