A creamy and cheesy corn casserole that is easy to make and packed with flavor.

- 2 cans (15.25 oz each) whole kernel corn, drained
- 1 can (15.25 oz) creamed corn
- 1 package (8 oz) cream cheese, softened
- 1/2 cup unsalted butter, melted
- 1 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 sleeve (about 40) Ritz crackers, crushed
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the whole kernel corn, creamed corn, softened cream cheese, melted butter, sour cream, shredded cheddar cheese, shredded mozzarella cheese, chopped green onions, garlic powder, salt, and pepper. Mix until well combined.
- Spread the corn mixture evenly into the prepared baking dish.
- In a small bowl, mix together the crushed Ritz crackers and grated Parmesan cheese. Sprinkle this mixture evenly over the top of the corn mixture.
- Bake for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
- Let it cool slightly before serving.
Notes
- For added flavor, you can include diced jalapeños.
- Substitute the cheeses according to your preference.
