A delicious and cheesy ground turkey enchilada bake that everyone’s sure to love.
Ingredients

- 1 lb ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (10 oz) enchilada sauce (red or green based on preference)
- 1 cup corn (fresh or frozen)
- 1 cup bell peppers, diced (any color)
- 2 cups Mexican blend cheese, shredded
- 8 corn tortillas
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp salt
- ½ tsp black pepper
- Fresh cilantro, chopped (for garnish)
- Sour cream (for serving, optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced onion and sauté for about 3 minutes until translucent. Add minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground turkey to the skillet. Break it up with a spatula and cook until browned, about 5-7 minutes. Stir in cumin, chili powder, salt, and black pepper.
- Once the turkey is fully cooked, stir in black beans, corn, bell peppers, and half of the enchilada sauce. Mix well until everything is evenly combined and heated through (about 2-3 minutes).
- In a 9×13 inch baking dish, spread a thin layer of enchilada sauce on the bottom. Layer 4 corn tortillas, overlapping them slightly to cover the base. Spread half of the turkey mixture over the tortillas, then sprinkle with 1 cup of shredded cheese. Repeat the layers with the remaining tortillas, turkey mixture, and top with the remaining enchilada sauce and cheese.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh cilantro and serve with a dollop of sour cream if desired.

- Feel free to customize the vegetables based on your preference.
- Can substitute turkey with ground beef or a meat substitute for a vegetarian option.
- This dish can be made ahead of time and stored in the refrigerator before baking.
