Description

Cheesy Pepperoni Sourdough Pizza Bread is a delightful twist on traditional sourdough bread, enriched with mozzarella cheese and pepperoni for an irresistible taste.


Ingredients

  • 100 grams (½ cup) active sourdough starter
  • 350 grams (1½ cups) water, at room temperature
  • 500 grams (5 cups) all-purpose flour (unbleached white)
  • 80 grams (1 cup) grated mozzarella cheese
  • 45 grams (½ cup) quartered pepperoni slices
  • 3 grams (1 tablespoon) Italian seasoning
  • 10 grams (2 teaspoons) salt

Instructions

  1. Grate the mozzarella cheese and cut the pepperoni slices into quarters.
  2. In a large bowl, combine the sourdough starter, water, flour, cheese, and salt. Add half of the pepperoni and mix slightly. Then add the remaining pepperoni and mix until a rough, shaggy dough forms. Cover and let rest for 30 minutes.
  3. After resting, stretch the dough gently from one edge and fold it over itself, rotating the bowl. Let it rest for another 30 minutes.
  4. Repeat the stretch and fold process two more times, covering and resting for 30 minutes after each round.
  5. Cover the dough and let it rise at room temperature for 4–6 hours until doubled in size.
  6. Shape the dough, place it in a floured banneton, cover, and refrigerate overnight for at least 12 hours.
  7. Preheat the oven to 425°F (220°C) with a Dutch oven inside. Transfer the dough onto parchment paper, score the top, and place it into the preheated Dutch oven.
  8. Cover with the lid and bake for 55 minutes. Remove the lid and bake for an additional 5 minutes if necessary for a golden crust.
  9. Transfer the loaf to a cooling rack and let it cool for at least 1 hour before slicing.
