Description

A delightful Cheesy Southern Squash Casserole that combines the flavors of squash, cheese, and a crunchy topping for a comforting dish.


Ingredients

  • 5 medium squash, sliced into 6 mm rounds (900 grams total)
  • 80 grams chopped onion
  • 60 millilitres butter
  • 120 grams sour cream
  • 1 large egg, beaten
  • 115 grams shredded cheddar cheese
  • 50 grams grated Parmesan cheese
  • 120 grams finely crushed butter crackers (about 25 crackers)
  • 2.5 grams garlic powder
  • 4 grams salt
  • 2.5 grams black pepper, ground

Instructions

  1. Mix together the drained squash, onion, garlic powder, salt, black pepper, sour cream, beaten egg, cheddar cheese, and 25 grams of Parmesan cheese in a large bowl. Make sure it’s well blended.
  2. In a bowl, combine the 45 millilitres of melted butter with the crushed butter crackers and the remaining 25 grams of Parmesan cheese until everything’s coated evenly.
  3. Melt 15 millilitres of butter in a big pan over medium heat. Toss in the chopped onion and sauté for about 7 to 8 minutes until it becomes soft and see-through.
  4. Now, throw the sliced squash into the pan. Let it cook for 10 to 12 minutes, stirring often, until the squash is soft and the moisture has come out.
  5. Scoop the squash mix into a baking dish that holds 1.5 litres (like a 20 x 20 centimetres one). Spread it out evenly, then sprinkle the cracker mixture on top.
  6. Pour the squash and onion mix into a colander lined with a clean kitchen towel. Let it drain for at least 5 minutes, pressing gently to squeeze out the extra moisture.
  7. Pop it in a preheated oven set at 175°C for about 25 minutes until the top is golden and bubbly. Let it cool a bit before you dig in.
