Description

A delightful dessert combining the rich flavors of cherries and Amaretto in a classic tiramisu.


Ingredients

  • 1 cup fresh or jarred cherries, pitted and halved or whole
  • 1/4 cup Amaretto liqueur
  • 1 tbsp granulated sugar
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 16 ladyfingers
  • 1/2 cup brewed espresso, cooled
  • Cocoa powder, for dusting
  • Shaved dark chocolate (optional)

Instructions

  1. Macerate the Cherries: In a small bowl, combine the cherries with Amaretto liqueur and granulated sugar. Stir well and let the mixture sit for 30 minutes, stirring occasionally.
  2. Prepare the Mascarpone Cream: In a large mixing bowl, add the mascarpone cheese, powdered sugar, and vanilla extract. Whisk until smooth.
  3. Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Combine the Fillings: Gently fold the whipped cream into the mascarpone mixture.
  5. Layer the Ladyfingers: Dip each ladyfinger in cooled espresso and line the bottom of a square or rectangular dish.
  6. Add the First Layer of Cream and Cherries: Spread half of the mascarpone mixture over the ladyfingers and spoon half of the cherry mixture over the cream.
  7. Repeat Layers: Dip remaining ladyfingers in espresso and arrange on top of the cherry layer. Spread remaining mascarpone filling and cherry mixture on top.
  8. Finish and Chill: Dust the top with cocoa powder and shaved chocolate if desired. Cover and refrigerate for at least 4 hours or overnight.

Notes

  • Make sure not to soak the ladyfingers too long in the espresso to avoid sogginess.
