Description

Ingredients

  • ½ cup cocoa powder

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • ½ cup hot water
  • 1 cup fresh cherries, pitted and halved
  • 1 cup dark chocolate ganache (homemade or store-bought)
  • Fresh cherries for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract.
  4. Gradually add the dry mixture to the wet ingredients, alternating with the buttermilk, without overmixing.
  5. Stir in the hot water and gently fold in the halved cherries.
  6. Pour the batter into the prepared cake pan and smooth out the top. Bake for 30-35 minutes.
  7. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. Once cooled, spread the dark chocolate ganache over the top and garnish with fresh cherries.
