Description

Cherry pie cookies are a delightful treat that combine the flavors of cherry pie with the soft, chewy texture of cookies.


Ingredients

  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Cherry pie filling
  • For the glaze:
  • ½ cup powdered sugar
  • 12 tablespoons milk
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing well.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, leaving space between each.
  7. Create an indentation in the center of each cookie using your thumb or the back of a spoon.
  8. Spoon a small amount of cherry pie filling into the indentation of each cookie.
  9. Bake for 12-15 minutes or until the edges are lightly golden. Keep an eye on them to prevent over-baking.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. For the glaze, in a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled cookies.
