A delicious Chicken Avocado Melt Sandwich featuring grilled chicken, creamy avocado, and melted cheese on toasted bread.
Ingredients

- 2 cooked chicken breasts (grilled or rotisserie), sliced
- 1 ripe avocado, mashed
- 4 slices sourdough or ciabatta bread
- 1 tomato, thinly sliced
- 4 slices provolone or mozzarella cheese
- 2 tbsp mayonnaise (optional)
- 1 tbsp Dijon mustard (optional)
- 2 tbsp butter, softened
- Salt & pepper, to taste
- Fresh basil or arugula (optional for extra flavor)
Instructions
- In a small bowl, mash the avocado with a pinch of salt and pepper.
- Spread a thin layer of mayo and Dijon mustard on each slice of bread, if using.
- On two slices of bread, layer sliced chicken breast, mashed avocado, tomato slices, cheese, and fresh basil or arugula if desired.
- Top with the remaining bread slices to form a sandwich.
- Spread butter on the outsides of each sandwich.
- Heat a skillet or grill pan over medium heat. Cook the sandwiches for 3–4 minutes per side or until golden brown and the cheese is melted.
- Slice and serve warm with chips, salad, or your favorite side.
Notes
- Feel free to customize with your favorite ingredients.
- For a healthier option, use whole grain bread.
- Can be made ahead and grilled just before serving.
