Description

A delicious Chicken Avocado Melt Sandwich featuring grilled chicken, creamy avocado, and melted cheese on toasted bread.


Ingredients

Scale
  • 2 cooked chicken breasts (grilled or rotisserie), sliced
  • 1 ripe avocado, mashed
  • 4 slices sourdough or ciabatta bread
  • 1 tomato, thinly sliced
  • 4 slices provolone or mozzarella cheese
  • 2 tbsp mayonnaise (optional)
  • 1 tbsp Dijon mustard (optional)
  • 2 tbsp butter, softened
  • Salt & pepper, to taste
  • Fresh basil or arugula (optional for extra flavor)

Instructions

  1. In a small bowl, mash the avocado with a pinch of salt and pepper.
  2. Spread a thin layer of mayo and Dijon mustard on each slice of bread, if using.
  3. On two slices of bread, layer sliced chicken breast, mashed avocado, tomato slices, cheese, and fresh basil or arugula if desired.
  4. Top with the remaining bread slices to form a sandwich.
  5. Spread butter on the outsides of each sandwich.
  6. Heat a skillet or grill pan over medium heat. Cook the sandwiches for 3–4 minutes per side or until golden brown and the cheese is melted.
  7. Slice and serve warm with chips, salad, or your favorite side.

Notes

  • Feel free to customize with your favorite ingredients.
  • For a healthier option, use whole grain bread.
  • Can be made ahead and grilled just before serving.
