- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup plain yogurt
- 2 tablespoons freshly squeezed lemon juice
- Pinch of salt
- 2 tablespoons olive oil
Instructions
- In a large mixing bowl, combine ground chicken, onion, garlic, and parsley. Add cumin, coriander, salt, and black pepper. Mix thoroughly with clean hands until well blended.
- Wet your hands and form the chicken mixture into elongated oval shapes, approximately 8 to 10 pieces.
- Set grill or grill pan over medium-high heat. Brush the surface with olive oil to prevent sticking.
- Place kofta on the hot grill and cook for 5 to 7 minutes per side, turning once, until evenly browned and cooked through (internal temperature should reach 75°C).
- In a small bowl, stir together yogurt, lemon juice, and a pinch of salt until smooth.
- Arrange kofta on a serving platter and accompany with the garlic yogurt sauce and preferred side dishes.

- Allow kofta to rest for several minutes after grilling to enhance flavor and retain juiciness.
