  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

  • 1/2 teaspoon ground black pepper
  • 1 cup plain yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • Pinch of salt
  • 2 tablespoons olive oil

Instructions

  1. In a large mixing bowl, combine ground chicken, onion, garlic, and parsley. Add cumin, coriander, salt, and black pepper. Mix thoroughly with clean hands until well blended.
  2. Wet your hands and form the chicken mixture into elongated oval shapes, approximately 8 to 10 pieces.
  3. Set grill or grill pan over medium-high heat. Brush the surface with olive oil to prevent sticking.
  4. Place kofta on the hot grill and cook for 5 to 7 minutes per side, turning once, until evenly browned and cooked through (internal temperature should reach 75°C).
  5. In a small bowl, stir together yogurt, lemon juice, and a pinch of salt until smooth.
  6. Arrange kofta on a serving platter and accompany with the garlic yogurt sauce and preferred side dishes.
