- 1 pound ground chicken
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, finely chopped
- 1 carrot, grated
- 1/4 cup soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 1 head of butter or iceberg lettuce, leaves separated
- Chopped green onions and sesame seeds for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic, sautéing for 2-3 minutes until the onion is translucent.
- Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the chopped mushrooms and grated carrot, cooking for an additional 3-4 minutes until the vegetables are tender.
- In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, sesame oil, ground ginger, salt, and pepper. Pour this sauce over the chicken mixture and stir to combine. Cook for another 2-3 minutes to heat through.
- To serve, spoon the chicken mixture into the lettuce leaves, garnishing with chopped green onions and sesame seeds.
Notes
- Feel free to add other vegetables such as bell peppers or zucchini for extra nutrition.
- This dish is best served fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
